Blend the peas into a smooth cream then add the other ingredients in this order: eggs, ricotta, cheese, breadcrumbs and salt to taste.
Leave to rest for a couple of minutes.
In the meantime, grease six disposable foil cases then pour the mixture into them, dividing it up equally. Cook in a preheated oven for 25 minutes at 170°C.
While the timbales are cooking, prepare the cheese sauce. Place the cheese, milk and butter in a saucepan and heat in bain-marie for 5 minutes.
Once the timbales are cooked, leave them to cool for 5/6 minutes then take them out of the cases by turning them upside down. Serve with the cheese sauce and ENJOY!
